Capay Mills began operation in Capay Valley in 2015 with the vision of reconnecting family farmers to the wider community through delicious, wholesome flour freshly milled from sustainably grown heirloom grains. They seek to reverse the extinction of craft mills and grain growers caused by the industrialization of the grain economy, by returning control over price, quality and distribution to farmers and their customers and by collaborating directly with both to produce the most flavorful, nutritious, environmentally regenerative flour available.

Capay Mills grows its own heritage grain and sources directly from neighboring farmers who plant grain in rotation with other crops without the use of herbicides, pesticides or synthetic fertilizers. Their flour is stone-milled-to-order to capture the rich flavor, nutrition, and digestibility of whole grains, featuring heirloom wheat varieties chosen for their unique character, baking profiles, and adaptation to organic cultivation.

A true community miller, Capay Mills welcomes custom orders for both whole grain and sifted flours, and enjoys developing custom flour blends that enable their customers to create exceptional breads, pastries and baked goods limited only by their imaginations
