Preparation
Roast peppers at 350 F for about 15 min and peel themp>
Chop the roasted peppers and bake them into corn bread
Slice them and fold them into tortillas with soft mexican cheese
Stuff them with shredded chicken, raisins, and walnuts & top with sour cream
Stuff with rice, shredded cheese, onions and garlic
Layer with tortillas, cheese and enchilada sauce and bake
