Ingredients

  • 1 head red cabbage
  • 1 red daikon
  • 1/2 lemon
  • 1/2 bunch parsley
  • extra virgin olive oil (we recommend Taber Ranch or Capay Oaks)
  • salt & pepper

Preparation

  1. Remove leaves from red cabbage cutting out any thick stem. Slice into strips 1-2″ long and place in bowl
  2. Generously salt cabbage. Massage cabbage by hand working in the salt until the texture changes from dry to slightly moist. Should take about a minute.
  3. Peel and grate red daikon. De-stem and chop parsley. Add both to cabbage.
  4. Add 1-2 tablespoons lemon juice plus zest from the rind.
  5. Generously drizzle with olive oil.
  6. Add salt,  pepper, lemon, or oil to taste.
