Red Cabbage Slaw
Ingredients
- 1 head red cabbage
- 1 red daikon
- 1/2 lemon
- 1/2 bunch parsley
- extra virgin olive oil (we recommend Taber Ranch or Capay Oaks)
- salt & pepper
Preparation
- Remove leaves from red cabbage cutting out any thick stem. Slice into strips 1-2″ long and place in bowl
- Generously salt cabbage. Massage cabbage by hand working in the salt until the texture changes from dry to slightly moist. Should take about a minute.
- Peel and grate red daikon. De-stem and chop parsley. Add both to cabbage.
- Add 1-2 tablespoons lemon juice plus zest from the rind.
- Generously drizzle with olive oil.
- Add salt, pepper, lemon, or oil to taste.
