Serves 4. Active time 15 minutes.

Ingredients

  • 6-8 carrots
  • 1/2 – 1 lemon, juiced
  • 1/2 tsp coriander and cumin (toasted and ground if using whole)
  • Salt

Preparation

Halve carrots lengthwise, slice moderately thin (about 1/4") and cut to 1" strips

Toss with other ingredients and season to taste
