Our dried fruit is all organic and certified by Stellar Certification Services, it is hand picked, hand cut, dried in the sun on redwood drying trays, once dry and when we have orders we add back a small amount of water for rehydration and then hand packaged. We do not use any sulphur in the drying process.
RECIPES
Dried Peach Chutney
Chutney is easy to make, and it keeps for weeks in the refrigerator. It is delicious served with roasted meats, or poultry, or as a spread on o sandwiches. I particularly like it with crackers and a Monchego cheese or on a sandwich of smoked turkey and cream cheese.
1 medium onion thinly sliced
1 small clove garlic minced
1 cup raisins
3 cups dried peaches chopped
2 Tablespoons chili powder
1 Tablespoon. salt
1 quart cider vinegar
2 1/4 cup brown sugar packed
2 cinnamon sticks
1/4 cups mustard seed
½ cup crystallized ginger
In a large saucepan, combine the dried peaches, onions, brown sugar, vinegar, cinnamon sticks, ginger, red peppers and salt. Bring to a boil over medium high heat. Reduce the heat to low and simmer, stirring occasionally for 1 ½ hours or until deep brown and thickened. Remove from heat and cool to room temperature. Remove and discard cinnamon sticks. Place in glass containers and refrigerate up to 1 month.
Honey Apple Crumble with Dried Fruit
In addition to rehydrating the dried fruit and cranberries, the cider deepens the flavor to the apples
1 ¾ cups apple cider
¼ cup finely chopped dried fruit (your choice)
½ cup nutlike cereal nuggets (like grapenuts)
½ c up packed brown sugar, divided
5 tablespoons flour divided.
1-teaspoon cinnamon divided
3 tablespoons honey
1-teaspoon vanilla extract
5 medium apples (about 2 ½ pounds) peeled and cut into 8 wedges
Preheat oven to 350
Bring cider to a boil, Remove from heat, and stir in dried fruit and cranberries. Let stand 20 minutes. Drain dried fruit in a colander over a bowl, reserving cider.
Combine dried fruit, cereal. ¼ cup sugar, 1-tablespoon flour and ½ teaspoon cinnamon in a bowl.
Combine1/4 cup sugar, ¼ cup flour and ½ teaspoon cinnamon in a large bowl; Stir n reserved cider, honey and vanilla. Add apples, tossing gently to coat. Place apple mixture in an11 x 7-inch baking dish coated with cooking spray, top with cereal mixture.
Bake at 350 fro 55 minutes, yields 6 servings.
Oatmeal Dried Fruit Raisin Cookies
1 ¼ -cup butter softened
1 ¼ cup brown sugar
1 egg
2 teaspoons vanilla extract
1 12/ cups flour
1 teaspoons baking soda
1-teaspoon salt
1-teaspoon cinnamon
½ teaspoon nutmeg
½ teaspoon cloves
‘3 cups quick cooking oats
1 to 2 cups dried fruit chopped
Preheat oven to 375. In a large bowl, cream together the butte and sugar until light and fluffy. Beat in the egg, and then stir in the vanilla. Sift together the flour, baking soda, salt, cinnamon, and nutmeg. Gradually sir this into the creamy mixture, and finally, stir in the oats and dried fruit. Drop by rounded spoonfuls onto the unprepared cookie sheet. Bake for 8-10 minutes in the oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cook completely. (Variation; add 1 teaspoon orange or lemon zest with the vanilla and or 1 cud chopped almonds or walnuts with the dried fruit.
