What to do with Pesto
Basil only grows in the summer, so you may find you’ve got more Basil than you know what to do with. Once processed into pesto, it freezes well and can be used all winter. Thawed pesto will be dark and much softer than fresh pesto, so you may want to reserve it for hot dishes. Other pestos, such as Swiss Chard or Spinach Pesto will be equally delicious all the ways listed below.
- Spread pesto on any sandwich. Try it with tomatoes and cheese or BLTs.
- Pesto burgers! Top your favorite burger with pesto, or add the pesto to ground meat (or meat substitute) before cooking
- Mash 3/4 c pesto with 4Tbsp butter and brush on corn, serve on baked or potatoes, or toss with lightly steamed vegetables
- Use pesto as the dressing for chicken, potato or tuna salad.
- Layer it into lasagna or use it as the primary sauce on homemade pizza
- There are 100 ways to use pesto on pasta– with clams, cheese, pasta primavera, in the tomato sauce, or with white beans and sauteed greens.
- Use fresh pesto as a spread or dip with crackers, bread or fresh cut vegetables
