Summer Squash/Zucchini Bread

This recipe comes from a good friend who is an amazing baker. She gives gifts of wonderful breads and cookies throughout the year.  This is a great use of  either when you have too much, or when they’re a little over grown. Have fun and share with friends!

Ingredients

  • 2 1/3 cups all purpose flour
  • 1 1/2 cups sugar (or just 1 cup depending on how sweet you like it)
  • 2 cups (or other summer squash), grated
  • 2/3 cup shortening or 2 blocks baking margarine
  • 2/3 cup milk
  • 3 eggs
  • 1 1/4 tsp baking powder
  • 1 1/4 tsp baking soda
  • 1 tsp salt  (optional)
  • 2/3 cup nuts
  • 2 tsp cinnamon
  • 1/2 tsp nutmeg

Preparation

Mix all ingredients, pour into greased / flour loaf pans or 13x9x2 inch oblong, or two 9 inch or 3 8 inch round pans.
Bake 350 degrees 45 – 50 min. Enjoy!
