Sauteed Summer Squash
Ingredients
4 summer squash, thinly sliced
1 onion, chopped
2 cloves of garlic, diced
2 Tbsp Extra Virgin Olive Oil (EVOO)
2 Tbsp water
1/4 tsp salt
Preparation
In a large skillet, saute garlic and onions with EVOO over medium-high heat for 3-5 minutes. Add squash, salt and water and continue to stir until squash is soft and the seedy center is slightly translucent (5-7 minutes). Serve alongside a main dish.
