Romano Beans with Fresh Herbs
Ingredients
3/4 lbs romano beans
Salt
Extra virgin olive oil
Fresh Sage (or use other pungent herbs such as fresh marjoram or oregano)
Preparation
Chop 5-10 sage leaves and place in small frying pan with 3 tablespoons olive oil. Heat gently until warm to the touch. Turn off and let sit to infuse while preparing beans.
Cut the beans into 1-inch lengths; cut diagonally for a more interesting look. Cook the beans until tender in abundant salted boiling water. Drain the beans and toss them with the sage-infused olive oil and salt. Taste for salt and serve.
