Quick Delicious Kale
Ingredients
1 bu Red Russian Kale
1 clove garlic, chopped
or 1 Tbs chopped green garlic
1 Tbs EVOO
Salt to taste
Preparation
Wash kale. Trim leaves from the stems with a paring knife or your hands. Chop kale leaves coarsely in about 1” strips. In a pan over medium heat add the olive oil (EVOO). Saute garlic for about 30 seconds, then add the kale and sauté for about 1-2 minutes. Turn the heat down and cover to cook kale more thoroughly (1-2 minutes), or continue to sauté until kale is cooked as desired. Add salt to taste. Enjoy.
Also great on quick delicious kale: sprinkle of lemon juice, crumbled feta cheese, chopped walnuts.
