Pasta with Summer Squash
1 pound summer squash, sliced thin
1 medium onion, chopped
handful of basil leaves (about 25)
2 tablespoons olive oil
1 pound pasta
parmesan cheese
fresh ground black pepper
salt
Chop onion fine and sauté over medium heat in the olive oil, stirring. After about 5 minutes, add the summer squash and continue cooking for another 5 minutes or so. Remove from heat, add salt as desired, and add chopped basil. Cover.
In a separate pot, boil water and cook the pasta according to directions. Mix pasta and squash in a pot or bowl and serve.
Serves 4.
