Mickey Lee Watermelon Refreshment
Yield: Feeds 6 – 12
Ingredients
- 1 ea Mickey Lee Watermelon (or your favorite Heirloom Melon)
- 1 ea Lemon
- 1/4 c Wildflower Honey
- 1/4 c Water
- 1 T Vanilla Extract
- 2-4 c Ice
- 1/4 bu Mint
Method
- Cut the rind off the Melon. Chop into cubes.
- In a small sauce pan, heat Honey, Sugar, and vanilla till it is smooth.
- Zest Lemon.
- Combine all ingredients in a blended and pulse until smooth.
- 5 minutes before guests arrive, blend in ice and Lemon Zest.
- Serve in a Rocks Glass with a sprig of Mint.
