Mashed Delicata Squash

Ingredients

  • 1-2 squash, quartered and seeded
  • Butter
  • Salt

Preparation

Place the squash in a steamer with plenty of water underneath. Cook until a fork pierces the squash easily. Remove squash and scoop out the insides, leaving the skin. Because the squash is so hot, I use a fork to hold it while I scoop with a spoon.  Mix the squash in a bowl with salt and butter and mash it together. The squash is usually moist enough that it does not need extra liquids added, but try using the water left over from steaming the squash if you need it. Enjoy.
