Mandarin Orange and Ginger Relish
Ingredients
- 1 cup mandarin orange slices, cut into ½-inch pieces, skin and pith removed
- 1 scallion, chopped
- 1 ½ teaspoons grated fresh ginger
- 2 teaspoons juice from 1 meyer lemon
- 2 teaspoons extra-virgin olive oil (we recommend Taber Ranch or Capay Oaks, available upon request)
- salt and pepper, to taste
Preparation
Place mandarin orange pieces in strainer set over medium bowl and drain (~15 minutes).
Pour off all but 1 tablespoon mandarin juice from bowl, whisk in scallion, ginger, meyer lemon juice and oil. Stir in mandarin orange pieces and season to taste with salt and pepper.
Serve on top of fish, chicken, rice or turkey!
