Hot Wilted Greens
Greens are simple to prepare & can be done in 10 minutes or less. Greens includes the broad range of green leaf vegetables; such as, kale, mustard greens & chard. You can play with the recipe below by adding things like raisins, toasted pecans, pine nuts or different vinegars to change the flavor. Serve as a side dish or put these cooked greens over pasta with some Parmesan & you have a beautiful meal!
Ingredients
- extra virgin olive oil
- 1 large clove garlic, minced
- 1 medium sweet red onion
- 3 tablespoons chicken or vegetable stock
- 2 tablespoons balsamic vinegar
- 1 bunch of greens
Preparation
Add olive oil to skillet, heat and add garlic and onions. Saute for 3-4 minutes, until onions and garlic are softened. Stir in stock and vinegar. Add greens and mix. Saute for 2-3 minutes, until leaves are coated. Cook several minutes more, until leaves are wilted.
