Fava Bean Sauce for Pastas and Meats
This is a smooth, creamy dressing, great for topping fettuccine or grilled chicken or fish.
Ingredients
2 Tblsp extra virgin olive oil
3 cloves garlic, minced
1 Tblsp finely chopped fresh oregano (or 1/4 tsp dried)
1 C chicken stock (or other stock)
salt and freshly ground pepper
1 1/2 C cooked, peeled fava beans
Preparation
Heat olive oil in pan over medium heat. Add garlic and brown. Add oregano and stock and bring to a boil. Add fava beans and simmer briefly (5 minutes). Blend until smooth and add salt and pepper to taste.
