Cucumber with Herb Sauce
1 Cucumber, sliced thinly
1/2 cup EVOO
1/2 cup vinegar
1/2 cup fresh dill chopped
1/2 cup fresh chives, chopped
1/2 cup fresh parsley, chopped
1/2 tsp of sugar
1/2 red onion, finely chopped
1. Mix sour cream , herbs, onions and sugar. Mix in cucumber. Salt and pepper for taste
