Comforting Stewed Potatoes
Ingredients
- 1 ½ pounds mixed potatoes
- 8 scallions, including a few inches of the greens, chopped
- 2-3 tablespoons butter
- Salt and freshly milled pepper
- Water or milk
- 3 tablespoons chopped parsley
Preparation
Peel the potatoes and cut them into ½ inch chunks. Put them in a heavy saucepan with the scallions and butter, 1 teaspoon salt, and enough water or milk to cover. Bring to a boil, then lower the heat and simmer, covered, until the potatoes are tender and the liquid has been absorbed, about 25 minutes. Taste and season with salt and pepper. Toss with the parsley and serve.
