Celery Root and Parsnip Puree
This is a fantastic substitute for mashed potatoes!
Ingredients
- 1 pound celery root
- 1 pound parsnips
- 1 cup milk
- 2/3 cup sour cream
- 2 tablespoons butter
- salt & pepper
Preparation
Peel and chop celery root and parsnips; cook in salted boiling water until tender, about 20 minutes. Drain, then puree in a blender with milk, sour cream and butter. Season with salt and pepper.
